For over a decade, Norbey Quimbayo has cultivated coffee and community at La Esmeralda, a 12-hectare farm in Acevedo, Huila, at 1,750 meters. With his wife and two children, he oversees every step, from hand-selecting cherries to carefully timed semi-washed processing.
Norbey’s focus on perfection and unique terroir yields cherries that are intensely sweet and fruity, with layered flavors developed through acetic and lactic fermentation and two weeks of sun-drying.
This Pink Bourbon showcases his craftsmanship, offering a complex cup with notes of jammy fruit, bright nectarine and strawberry, and a creamy, lactic finish (think chocolate milk). Enjoy!
